The best scientific graphing programs for the Mac are:
Igor Pro
Kaleida Graph
Sigma Plot
Sigma Plot is a bit unfriendly (but I am used to it--and there is a new
version coming), but the other two are Mac originals (easier to use). I
believe all three give you exact control on producing graphs.
