Iso-Electric-Focusing (IEF) reference samples?

Hi all, 
       I wasn't sure where these questions should be posted, so here they are...

What is the best way to maintain the meat reference samples for IEF?
Is it freeze drying? If so, what is the best method?
Has the IEF technique been used for bird or fish meat identification?
