Baker's yeast has a wet formulation and a dry formulation.
The dry formulation in little bags of 7 g is sold by supermarkeds.
I would like to know how they dried this yeast. Is it done by
spray drying, freeze drying, or after making a yeast gel?
Could you provide some references about this?
Thanks in advance,
