Since posting my reply yesterday about racemisation of amino acids in milk
on microwave heating, I have found the (partial) references:
Formation of D-proline on microwave heating milk:
Lubec et al, The Lancet, 2, 1392-1392 (1989)
Use of microwaves for catalyzing racemisation of amino acids:
Chen et al, J. Chem. Soc., Chem. Comm. 807-809 (1990)
D-proline is neurotoxic for chicks:
Cherkin et al, Pharmacol. Biochem. & Behaviour, 8, 623-625, (1977)
