action of rennin on milk

I'm not sure if this is the correct place for this, but I am looking for any 
information on the action of rennin on milk to make cheese (formula, 
equations, etc.).

In searching through physiology materials, I have found much information on 
most enzymes except this one.  If anyone can help or suggest places to 
research, the information would be appreciated.
