Iodine

	I am preparing to teach a 9th grade bio lab tomorrow (wed. 10/18).

In order to teach them about diffusion and surface area vs. volume I am 
going to have them soak potatoes in iodine. Here is the question:

	If the solution of Iodine is orange, why does the potatoe turn
blue after sitting in the iodine for a while?
