Help me for Some tips !!

According on my investigation about fermentation process to production 
of enzyme for e.q. Hemycellulase and Mananase, I need some tips or 
methods for analysis the activities and indentification those enzymes, 
so please !!, give me some informations about that. I hope from this 
forum I take some informations.
