I think you will find an abundance of information on Hb-O2 interactions in
current Biochemistry texts. Hb is a model enzyme and is usually covered in
great detail by many graduate and undergraduate Biochemistry text books.
Look in the new edition of Stryer, or even the Lehninger text. I think you
will find what you are looking for... and then some.
