Bruce Kristal, in collaboration with some industrial partner or other 
(can't remember who) has published a couple of papers regarding a method 
for tracking of a lot (i.e hundreds) of metabolites simultaneously, and 
applied it to various perturbations of cellular systems (e.g. mitochondrial 
inhibitors). Try a MedLine search for him.    time resolution, I would 
imagine any such measurement is limited by the speed of the operator in 
taking an aliquot of cells and "clamping" them in a given state for 
subsequent analysis.
