Enzymatic or synthetic chitosan

Thanks for the leads.  I will follow-up on MIT and the book. 
Unfortunately my interests are in production of chitosan rather than uses
- I have found *plenty* of uses for it!!!  

Any other information on novel production would be really helpful.
