Suggest you begin by contacting a chemist.  You'll need to decide which end of
the quinine molecule you want antibodies to and then develop a linking scheme
at the other end.  Looking at the structure of quinine you'll probably need
to synthesize (have the chemist synthesize) an alternate compound.  Another
approach to try first would be to similarity search the end you want to keep
and, luckily, you might find Aldrich or someone else sees the compound you
need to make.  Good luck.
