It would be helpful to know what types of studies you wish to use these 
cultures for.  Vectorial ion transport? Cell proliferation? Cytokine 
secretion?  Would immortalized cell lines be of use?  There is a large 
literature on this topic.  Alan Cuthbert, who is up the street from you, has 
done a lot with both intestinal and airway epithelia in culture and would be a 
useful resource.  For intestinal primary cultures check: Evans, Flint and 
Potten 1994 Annual Review of Physiology, p 399.  For airway cells check the 
cystic fibrosis literature.
