Fructans and fructose?

Could someone please tell me what a 'fructan' is?  
How (biochemically) are fructans converted to fructose?
What are the names of the relevant enzymes?

I cannot find 'fructan' in the Merck Index, or a biochemistry text.  I
suspect that it may be the same as 'inulin', which is a polysacharide
containing fructose.
