Protease activity can be measured by the Sorensen method. It involves a change in amino
groups detectable by TNBSA. Succinylated casein is combined with the protease containing
solution and as it is digested, new n-terminus amino groups are generated. These can be
compared with a standard curve generated with a known protease such as trypsin.
