Dear Giorgio; Please try to transfer your protein usin PVDF membrane. PVDF generally holds the protein better than NC. In my opinion, high concentration of sugar and acidity(not basic) does not influence the transfer efficiency significantly. Hope this help you. Seong-Hun Kim
