Just curious about a peculiar observation

Let me guess. 
When a solution changes from liquid to solid (or to vapor) 
state, it passes through an intermediate state (liquid/crystal? 
I don't know this term in English.). In the intermediate state, 
molecules are organized in certain order, and the organization 
is relatively stable for some extent, e.g., some degrees of 
temperature change. If the organization is disturbed, eg., by 
mechanical means, the solution will quickly go to the next 
state, the solid state.
