An ancient assay was to measure the decrease in the amount of hydrogen
peroxide at 240 nm.  If you want a detailed procedure, check out the
Worthington manual.  There are some more modern methods using fluorometric
probes if you want to get fancy.  Personally, I haven't done a catalase
assay in 25 years, but it is a simple enough assay that student labs do
some version of it.
