colour changes in pharma powder?

Here is a question for you chemist out there:

Omeprazole fine powder raw ingredient usually
has a shelf life of 2 years in fridge.

If the white crystalline material changes colour to
pink over time if left in room temperature what
would this indicate?

Does the material decay?  Anyone had experience
with this before?
