                 A very neat question!  The food microbiology folklore is
full of agents and environmental conditions that seem to affect the lag
phase MORE than they affect the exponential phase, but I'm not real clear
about agents that extend the lag phase, but do NOT affect growth rate.
                 I'll be watching this thread with great interest.
