Advices - Improving the content of proteins in dried salted fish

Dear sirs.

We are a producer of dried salted fish. We are seeking information about 
how to prevent proteins leave the fish-meat during salting and drying 
process of the fish.

We would apprisiate advices on how to keep the proteins, salt and water 
during the process of salting and drying fish.
