Fermentation of sausages

Hallo everyone!

We are two microbiology students from Denmark, who really wants to know 
something about fermentations in sausages. Especially would we like to 
know when the sausages are fermented, for how long, with wich 
microorganisms and how the fermentation is stopped. Perhaps you could 
give us some good references too.
