BAM stands for Bacteriological Analytical Manual.  It is put together
by scientists at the U.S. Food and Drug Administration and then
published by AOAC.  It provides specific "official " methods for the
detection of different microorganisms in foods.  AOAC stands for
Association of Official Analytical Chemists.  It is a scientific
society that evaluates methods for acccuracy, percisiion, etc. and
sets up "official methods."  If you would like more information
about the BAM I recommend that you contact Dr. George Jackson at the
FDA Center for Food Safety and Applied Nutrition.  The have a website
that should give you his e-mail address.
