E.coli O157 infection

I have been collecting information on the possible methods of infection
of people by E.coli. There is a recorded instance of infection through
swimming in a lake and drinking the water
It has been suggested that the infective dose could be extremely small.
If one swallows bacteria, why don't the stomach acids kill them?
Would it be possible, while swimming, to aquire the infection anally
instead of by mouth?
How is the organism eventually rejected by the body without eliminating
the normal E.coli?
