The Microbiology of Cheese

	I am having a hard time finding specific information on the 
microbiology of cheese.  I find sites on "cheese making," but the detail 
I require isn't there (I want to make cheese in a test tube..small 
scale).  Does anyone have any sites or maybe a file they can e-mail to
