kombucha tea fungus

Dear Microbiologists,
As I am a biochemist not a microbiologist I would like to ask you
about the kombucha organism a fungus that can metabolise black tea
(+sugar) into lactic acid and other substances. This drink created by
the kombucha is believed by many people to be vary healthy and a
therapeutical benefit can by achieved in a number of deseases.
So who does know any details about this tea fungus.
