Help:optimal condition for Nisin?

Nisin(3510mg/mol)is a polypeptides which consist of 34 amino acids,it's
synthesized by Streptocoes Lactis and mainly used as antiseptic additive
in food.We are searching some factors influencing the stability of Nisin
such as pH,temperature and etc,is there anyone out can give advice
on this?What's the optimal condition for Nisin?
