[Microbiology] Rule of Yeasts in table green olives production

Good morning,
I'm looking for some articles about the rule of yeasts (and their 
fermentations) in table green olives production. Now I'm studying yeasts 
isolated from green olives in order to identify them, but I need to know 
something more about the fermentations involved in the production process.
Can someone help me?
