Restriction Sites

I am trying to design an undergraduate lab exercise that would use 
commercially available DNA (calf, herring, salmon from Sigma?), cut it 
with restriction endonucleases, and demonstrate pattern differences 
between the fish and the mammal, presumably because the sites in the 
highly repeated portion of the genome are different.  This is far from my 
area of expertise.  Can anyone suggest some restriction enzymes that 
would in fact show differences?  Any help much appreciated.
