Shiitake: Lentinula edodes
You will sometimes encounter references to this as Lentinus edodes. It is
generally now regarded as distinct because it lacks the dimitic hyphae
which
characterize the genus Lentinus under the microscope.
Tree-Ear, or Mo-or: Auricularia polytricha
The culture method is very similar to that of Shiitake. Anitcoagulant
effects have been noted from this mushroom.
