Melanoidin , producted by maillard reaction has a dark color. I read some papers about it. In papers , people detect OD475 to measure the decolorization of melanoidins. But some people detect OD297 or OD254. I don't know why they do this ? Can someone tell me What are they measure for ? Thanks
