Portabella mushrooms

The other contributors are quite right: Portabello mushrooms are A. 
bisporus, brown, allowed to open, but the caps should still be convex. 
Completely flat (opened) mushrooms are too old (from a marketing point of 
view).
Another aspect is the air humidity and air velocity: ideally the 
Portabello's should have scales.
