Commerical fermentation of fungi - liquid culture

Greetings,
I have been asked to find out how to grow fungi in liquid culture. My
background is a plant physiologist not a mycologist. Are there some
standard texts that give details on commercial fermentation processes
including starting on the bench top and ending at some larger scale. I
appreciate that each fungi will require different conditions, but there
must be a sort of list that gives examples of equipment and
environmental variables that need to be considered and a few cook book
examples of commercially important processes eg. antibiotics.
