Tobias - Not sure about during fermentation, but perhaps the cheapest
protease inhibitor is EDTA (ethylene diamine tetra aceate), as in the food
preservative. You can get it from Sigma Chemical, or other such places, as a
sodium salt. It won't go into solution until the pH is ~8 (basic). Also from
them would be PMSF, which needs to be dissolved in ethanol. Don't remember
