You can find a few hundred pages on sensory systems of the brain in Kandel ER,
Schwartz JH, Jessell TM. Principles of Neural Science, 3rd edition. New York:
Elsevier; 1991. P. 326-529.

I think that it is a pretty good introduction to sensory systems.
