preserving flowers and leaves

Conifer cones dry fine (although the male cones probably need bagging).  
Why don't you collect fresh leaf material for your courses?  If this is 
not currently convenient, it might make sense to talk to your grounds people 
and request that certain species be planted nearby for this purpose, if 
your location permits.
