carotene in carrots

A student asked me today why there is so much b-carotene in carrot roots.
I've been unable to come up with a satisfactory answer. Are there any
anti-microbial properties to carotenoids? Has human selection been the
cause? Are the carotenoids ever mobilized to the shoot?
Any help will be appreciated!
