eosin dye

I use red koolaid (or generic equivalent) for "find the veins" exercises.
In a related questions, one of my students, after reading a paper in which
eosin was used to visualize cytoplasm (vs. nucleus), asked why eosin binds
where it does.  Does anyone know?
