I suggest you start reading the book _Breed Your Own Vegetable Varieties_ 
by Carol Deppe (ISBN 0-316-18104-8; copyright 1993). This book will, 
IMHO, give you an excellant introduction to plant breeding & answer your 
question about hybrids.

If your local library doesn't own this book, ask them to get it for you 
via Inter-Library Loan.
