Trying to find out why I can't detect Sucrose Synthase activity

I have problems with measuring Sucrose Synthase activity from Juglans regia xylem 
tissues. I use Nelson's protocol on a total protein extract, and I think that UDP-glucose 
may be used as a substrate for another enzyme.
Does anybody have pointers for me ??????
