Protein in eggs?

We are using laundry detergent with enzymes to show how they can break up
proteins (stains) in clothes.  To do this we are putting peeled, hard-bioled
eggs in a solution of this detergent.  I am wondering what kind of proteins are
in the egg, mainly the outside white part, that the enzymes will be acting on. 
Any suggestions?
