My crystals came and went

I set up a number of dialysis buttons in an attempt to crystallize
exonuclease VII from E. coli.  After a few weeks in the cold, I observed a
single cystal in one button sitting in ammonium sulfate.  After a few weeks
the crystal disappeared.  I am in the process of setting up some more
crystallizations.  What happened?
