I suggest two good database resources for searching zebrafish genes (a 
place to start, leading to information on proteins).

The Zfin database is specific for zebrafish:
      http://zfin.org/cgi-bin/webdriver?MIval=aa-newmrkrselect.apg
This allows you to search by gene, which you can follow up for protein 
information using a search engine.

Another source is the Gene Tools online searchable database of 
Morpholino publications:
      http://pubs.gene-tools.com
This will contain references for various organisms, but you can start by 
using the keyword "zebrafish".  Searches will return literature 
citations and abstracts, often with functional information on the 
proteins.

In general the information about zebrafish proteins will likely be 
easiest to mine starting from gene information. For protein-specific 
information such as protein structure you will need to follow up with 
another search engine (try Swiss-Prot at http://www.expasy.org/, the 
Ensembl browser  http://www.ensembl.org/index.html or Scirus 
http://www.scirus.com).

There are lots of publications related to heart and jaw development in 
zebrafish.  Come up with lists of synonyms and near-synonyms to use as 
keywords, for example heart, cardiac, aortic, etc.
