This a typical morphoanatomical abnormality which is usually related to the inside folding of operculum and suboperculum bones (for anatomical desciption and ontogeny you can have a look to Aquaculture, 156: 165-177).
In other fish species (e.g. European sea bass and gilthead sea bream) the deformity is induced by inmbalanced dietary conditions and / or unfavorable abiotic conditions during the early to middle larval phase.
