Question about MHC

I am a non-biologist (but fairly well informed layman) and I would
like some information on a matter:

-MHC I & II molecules and what they're used for.  How the body uses
 them to learn self versus nonself for immunology.  How these determine
 our own unique scents (which animals with better olfactory systems
 can use for recognition).  I have read a few articles referring to
 these but I would like to know much more.

I prefer Email replys.  Any information is appreciated.  Referrals
to magazine articles would be great.
