I can't recommend a book that you will want to buy, but if
your library has Methods of Enzymatic Analysis, 3rd ed.
(VCH, Weinheim and Deerfield Beach, FL, ed. Hans
Bergmeyer), you might be interested in the following
          chapters:

          Vol. 1. Ch. 2.7, Principles of Enzyme-immunoassays
Vol. 10. Ch. 1.1, Problems in standardization of
          enzyme-immunoassays for antibodies
Vol. IX., Ch. 1.3 Practical considerations in
enzyme-immunoassays illustrated by a model system.
Vol. IX, Ch. 1.4, Problems in standardization of
          enzyme-immunoassays for antigens.
