I discovered an absolutely remarkable book in my local library. The title
is "Role of Nutrition in Health and Disease". The author is William E.
Cornatzer, Ph.D., M.D., from the University of North Dakota School of
Medicine. Although it was published in 1989, it is still literally a
"gold mine" for information on the relationship between nutrients (lipids,
proteins, carbohydrates, minerals, trace elements and vitamins) and their
effect on the human body. It was written for use in teaching at medical
schools but anyone with a reasonable scientific background will find it
very readable. This is literally a case of "you have to see it to believe
it".
