Any ideas on tongue-rolling, ear-lobes etc?

I am a designer of interactive science exhibits, currently working on a
computer-based activity that compares visitors individual
characteristics.
In order to provide more background information, it would be a great
help if I knew more about the genetic basis of the following features :
Nose-shape
Tongue-rolling (can or can not)
Ear-lobes (present or absent)
Arm-folding (which hand on top)
Hand-clasping (which thumb on top)
Hair-type (straight, wavy, curly)
Hair-colour
Eye-colour
Skin-colour
Can anybody comment, please?
