             Dear Tom, you must know that wine fermentation isn't a 
normal fermentation, but a semifermentation. And of course there are a 
special Acetobacter (which is a bacterium and not a yeast) for special 
vinegars. If you want to know more about vinegar consult any microbiology 
book.
