Hi, Jane.

If you are simply trying to look at the lysozyme activity, the standard
system is to measure the rate of breakdown of cell walls of Micrococcus
lysodeikticus.  The cell walls of this organism are exquisitely sensitive
to lysozyme activity.  You measure the rate of decrease in optical density
at 450 nm, using a hen egg lysozyme to make a standard curve.  Protocols
should be easy to find.
