I'm surprised no one mentioned THE CLASSIC paper on this topic with respect
to evolution.  This paper is required reading in most molecular evolution
graduate courses -- or at least should be.  The paper:

Kacer and Burns.  1981.  The molecular basis of dominance.  Genetics 97: 
639-666.

The paper describes how mutant alleles in an enzyme pathway will
automatically be recessive in nature wholly as a result of the kinetic
properties of enzyme flux.
